The first time I made these cookies for my husband, he was confused why there was oatmeal in his chocolate chip cookie, but he quickly fell in love with them. The flavor profile is unbeatable!
Ingredients:
- 1/2 cup rolled oats
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 cup unsalted butter (at room temperature)
- 3/4 cup brown sugar (packed)
- 3/4 cup granulated sugar
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon lemon juice
- 2 large eggs
- 3 cups semi-sweet chocolate chips
- 1 1/2 cups chopped walnuts
Instructions:
- Preheat your oven to 350°F (180°C).
- Grind the rolled oats in a blender or food processor until fine.
- In a bowl, combine the ground oats, flour, baking soda, salt, and cinnamon.
- In a separate large bowl, cream together the butter, brown sugar, granulated sugar, vanilla extract, and lemon juice until smooth.
- Beat in the eggs one at a time.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Stir in the chocolate chips and chopped walnuts.
- Drop rounded tablespoons of dough onto ungreased baking sheets.
- Bake for 10-12 minutes or until the edges are golden but the centers are still soft.
- Cool on the baking sheets for a few minutes before transferring the cookies to a wire rack to cool completely.
