As I was creating the title for this one, my daughter piped up, “It’s MY mama’s sloppy joes!”
This meal is one that everyone in our family asks for on repeat. In the summertime, I love that I can find most of the ingredients right outside my door in our garden. The fresh bell peppers and onions give it the most magnificent flavor with just a hint of a crunch. I love that they contain all clean, real ingredients so we aren’t consuming the high-fructose corn syrup present in the popular canned brand.
We have served them with baked sweet potatoes, brioche buns, open faced on sliced bread, and over rice. Whichever you prefer!
Ingredients:
- 1 lb ground beef
- 2 stalks celery, diced
- 1/2 medium onion, diced
- 1/2 each red and yellow bell pepper, diced (can also use green)
- 2 cloves garlic, minced
- 1 Tbsp Chili Powder
- 1 tsp cumin
- 2 Tbsp coconut sugar or honey
- (1) 14oz can diced tomatoes, undrained
- (1) 6oz can tomato paste
Directions:
- In a large skillet on your stove top, sautee the onions & celery until tender. Add the garlic and sautee for about a minute, until fragrant.
- Add the ground beef, cooking until browned.
- Mix in your spices, honey, and bell peppers.
- Pour in the can of tomatoes & the tomato paste. Stir until combined.
- Simmer on low for 15-20 minutes. Add salt & pepper to taste
- Serve as you wish & enjoy!
Just like spaghetti, these are even better the next day!
