In this house, we’re a fan of all things cheese, so this Cowboy Queso recipe is perfect for us! It took less than 15 minutes to make & is enough to feed a crowd! It’ll be the perfect addition to your next get together — potluck, cookout, tailgate party. You could easily keep it warm in a Crockpot. Pair with your favorite chips & enjoy!

 

Ingredients:

  • 1 lb sausage
  • 3/4 chicken broth or pale ale
  • 16 oz Velveeta Cheese
  • 4 oz cream cheese
  • 1 cup pepper jack cheese, shredded
  • 1 can Rotel, drained
  • 1 can corn, drained
  • 1 can black beans, rinsed & drained
  • 1/3 cup red onion, diced
  • 1/4 cup cilantro

 

Directions:

  1. In a large skillet, crumble & brown sausage until cooked thoroughly. Drain excess fat.
  2. Stir chicken broth or ale into sausage, scraping the bottom of pan, if needed.
  3. Add cheeses & stir occasionally until melted.
  4. Mix in remaining ingredients. Let simmer 4-5 minutes, until they’re heated through.
  5. Serve with your favorite tortilla chips!
