Ever since I can remember watermelon has signified summertime. I am so excited to share the love of watermelon with my daughter who absolutely loves the sugar baby watermelons! I love the idea that it provides her a natural sugar as well as the nutrients she needs to keep her energized throughout the day. Not to mention the fact that it’s over 90% water which is phenomenal for helping with summertime hydration.
One of her favorite things is Watermelon Shaved Ice — and it’s SO simple! All you need is a watermelon & a handful of Russell Stover Sugar-Free chocolate chips (our favorite, at least).
To make your watermelon shaved ice, start by cutting your watermelon in half.
Using a melon baller (or even a spoon), scoop out a few balls of watermelon and set aside in the refrigerator to keep it fresh. These will be used as topping later.
Scoop out the remaining watermelon contents and place into a food processor. Blend until it’s a smooth liquid.
Pour your pureed watermelon into a baking dish. Place into the freezer for 2-4 hours, or until frozen.
Inside the empty watermelon rind or in a small bowl, scrape your frozen watermelon to create the “shaved” effect.
Place your refrigerated watermelon around the sides and top with your Russell Stover Sugar-Free Chocolate Chips. Sit down and enjoy!
